I am experimenting with cookies to bake for the local police department; I am so happy that they found my bike I wanted to do something nice for them. I am experimenting with cookies and so far so good. The shaved chocolate oatmeal cookies were adapted from Giant Chewy Oatmeal Chocolate Chip Cookies. I left out a few things and will put the recipe up soon. I used my country boy as a taste tester and he enjoyed the cookies, but did not like the fact that I used flax eggs apparently he did not like the nutty taste (he will get use to the flavor). I am assuming the police officers won’t either so I am going to stick with eggs and real butter (I used earth balance). I guess I should not push my obsession with vegan baking on those who are not willing to eat (well just yet) :).
