Breakfast Fruit Bowl

Lately I have been eating a lot of pumpkin, apple sauce, fall bread and muffins. There is this really nice vegan bakery close to my job that I love going to; I buy all my pastries and sweet tooth goodies from them. I hope someday I can own a vegan bakery and support local produce that everyone can enjoy! Let’s just say with all the sweets and goodies I have been eating I think I am having a carb and sugar overload. Today I decided it was time to take a break from all the sugary carbs and have a light breakfast; I made a fruit bowl and added whole wheat toast. I also had nice cup of peppermint tea that I have enjoyed with my breakfast this morning. I hope after this breakfast my sugar spike will come down without a major crash; if not I foresee a fruit bowl challenge in the future. 🙂

Breakfast Fruit Bowl: 2 medium persimmons, 1 huge celery stalk, One soft squishy pear. Cut up into tiny pieces and enjoy the flavor and colors; I recommend adding peppermint tea such a great refresher!

Shaved Chocolate Oatmeal Cookies

Shaved Chocolate Oatmeal Cookies, recipe I am experimenting with cookies to bake for the local police department; I am so happy that they found my bike I wanted to do something nice for them. I am experimenting with cookies and so far so good. The shaved chocolate oatmeal cookies were adapted from Giant Chewy Oatmeal Chocolate Chip Cookies. I left out a few things and will put the recipe up soon. I used my country boy as a taste tester and he enjoyed the cookies, but did not like the fact that I used flax eggs apparently he did not like the nutty taste (he will get use to the flavor). I am assuming the police officers won’t either so I am going to stick with eggs and real butter (I used earth balance). I guess I should not push my obsession with vegan baking on those who are not willing to eat (well just yet) :).
