Rice Cake Cereal

Savy Naturalista, NaturalistaThe texture of this cereal reminds me of oatmeal with a bit of a crunch, rice cake cereal is one of my favorite eats. When I am sick of oatmeal and toast I will usually make it as a cereal in the morning. It also makes a wonderful snack because I know most of us always have a package of rice cakes on hand.
I used soy milk today, but it works great with any milk I have used almond and coconut milk in the past. The toppings you can put on the cereal are unlimited; I usually stick to my favorites, peanut butter, coconut sugar, cinnamon, and banana. If you have topping that you enjoy you should use it, rice cake cereal is so easy and versatile any topping is great in my book. 🙂

Rice Cake Cereal

4 lightly salted rice cakes
1 cup soy milk
1 banana
½ tsp. cinnamon
Directions: Break rice cakes into small pieces in a bowl cover with soy milk, add banana and cinnamon. It is best when served cold


Yogurt Jook

This is a perfect mid-day meal that will keep you full all day long you may not want to eat your last three meals. One of my favorite go to recipes yogurt jook, I am in love with this recipe I cannot begin to tell you how easy the recipe will be. It puts Rachel Rays 30 minutes meals to shame (I love her). One of the perks about this meal there is protein and a carb yay!!!

Yogurt Jook: 6 oz. container of your favorite yogurt, ¼ cup of dried oats cooked in ½ cup of water probably less. Mixed oats and water, put in the microwave for about 5 minutes or less. Watch it carefully it will cook quickly, mine took 3 minutes. Once it is done add the yogurt and enjoy.

Smoothie Blues

I have a confession to make, I have been buying most of my smoothies a Jamba Juice, yes I know this week was supposed to be a week of creating smoothies that would kick start spring, but I have not been in the mood to get creative in the kitchen. I think I am still shell shock from my midterms I forgot how to be creative. I am going to try and do smoothies twice a week next week. This means more smoothie recipes yay!!!

This smoothie was not very good I am trying to get more protein in my diet; and well let’s just say it was more of an eggy slushy, I won’t let you suffer from this horrendous drink by providing the recipe. I thought the colors were amazing if my hand was steady, however I did drink it though.

Green Concoction Mix

Green Concotion Mix, savy naturalista, naturalista I typically use vegetable scraps in my green concoction juices are smoothies that I make once a week. I have been trying to increasing my intake from once a week to three times a week but I am not really looking to clean every component of my juicer during the week. Having a juicer can become a tedious project that I have no time for; I know I should make time for health but come on who really wants to clean a juicer every day and that is not including other dishes as well. I am not one to let vegetables go to waste so if they are brown are almost dying (fuzzy mold goes in the garbage) they go in the zip lock bag for juicing at the end of the week. I normally save broccoli stalks, celery, carrots, carrot leaves, kale stems, a dying cucumber; the list goes on of all the vegetable scraps I try to save and make green concoctions. Tomorrow I will show you what my green concoction mix will come up with…

Triple Chocolate Chip Cookie

Triple Chocolate Chip Cookies   Today I made triple chocolate chip cookies adapted from Summer Triple Chocolate Chip Cookies and this time I used real butter and eggs. I could not find a single white chocolate chip in the cookie after they were out of the oven I know I added plenty, I am assuming they change colors while baking in the oven. I really liked this recipe because I did not need a mixer at all just a rubber spatula and a good grip. I love the technique of a using rubber spatula instead of the mixer it made clean up time such a breeze. The only thing I changed about this recipe was I used ¾ cup of brown sugar instead of half and half. Now it’s up to country boy to decide which ones I should bake for the police officers. I am leaning towards triple chocolate chip cookies because I love white chocolate.

Now it’s time for some food porn, I drooled over these cookies while I was looking through my camera. When I realized the cookies were in front of me, I took a bite well two and they were just too rich for my palette. I guess I will just enjoy the pic’s 🙂

Shaved Chocolate Oatmeal Cookies

Shaved Chocolate Oatmeal Cookies, recipe I am experimenting with cookies to bake for the local police department; I am so happy that they found my bike I wanted to do something nice for them. I am experimenting with cookies and so far so good. The shaved chocolate oatmeal cookies were adapted from Giant Chewy Oatmeal Chocolate Chip Cookies. I left out a few things and will put the recipe up soon. I used my country boy as a taste tester and he enjoyed the cookies, but did not like the fact that I used flax eggs apparently he did not like the nutty taste (he will get use to the flavor). I am assuming the police officers won’t either so I am going to stick with eggs and real butter (I used earth balance). I guess I should not push my obsession with vegan baking on those who are not willing to eat (well just yet) :).

Carrot Granola

For the past two weeks I have had bags of carrots in the fridge.. Since I have had so many carrots and I have nothing else to do with them; neither do I want the carrots to spoil so I have been making carrot granola. I love granola but I hate when it has so much oil and so many nuts. This granola has some oil but not too much and absolutely no nuts. It is also very healthy and yes you will get your vegetables too. I love eat it for breakfast and a quick snack for the week. I am hooked on carrot granola; I love the fact that it is not too crunchy and not too soft. It’s just right to eat and hope it doesn’t disappear by the end of the week.

The Easiest Veggie Burger

I would like to give you guys the easiest veggie burger I love it… The reason why it’s so easy because it has no tofu and does not consist of any bread crumbs are eggs just some simple things you can find in the kitchen. It is also quick very time efficient for the days when you are on the go…I tried Quinoa  for the easiest veggie burger and it’s a super food. I did not have time to make buns I got home very late from work so I just kept it simple. They are yummy moist and flavorful and did not dry out. Oh did I mention the easiest veggie burger ever :).

1cup of quinoa

2 cups of black beans

2 cups of oat flour

½ cup of corn

1 big red yam or sweet potato

3 mild chili peppers

½ onion

½ tbsp. cumin

½ tbsp. coriander

½ tbsp. mild chili powder

½ table spoon of olive oil.

Directions: Boil a pot of water and add quinoa to the pot; while the quinoa is boiling chop up onions, chili peppers and sweet potato. Put the sweet potato in a bowl and microwave for about four minutes or until soft. Sauté the onions, chili peppers, and corn in olive oil until onions and chili peppers are translucent.  Smash the beans and sweet potatoes together make sure they still are chunky to get a firm hold for the burgers. Once the quinoa is done drain it from the water and put it in a bowl add the remaining ingredients to the bowl add the spices last. Stir really well make sure all the ingredients are in cooperated. Form into patties with hands and bake at 350 for 15-20 minutes.

Substitutions: You can substitute quinoa for rice I just like quinoa it’s quick so it does not take forever to boil. I used beans that were cooking in the crock pot that I put on before I went to work; if that is two much you can always use two cans of beans or one. If you do not have oat flour you can always use rolled oats it will not change the flavor. This recipe was made for veggie burgers in bulk, so we have enough for work meals next week. I made about 14 patties you may get more or less. My patties were medium size. Now about salt I really did not use that much salt, and everyone has a different preference for salt. I would adjust the salt to your taste buds. I hope you Enjoy 🙂
