Carrot Granola

For the past two weeks I have had bags of carrots in the fridge.. Since I have had so many carrots and I have nothing else to do with them; neither do I want the carrots to spoil so I have been making carrot granola. I love granola but I hate when it has so much oil and so many nuts. This granola has some oil but not too much and absolutely no nuts. It is also very healthy and yes you will get your vegetables too. I love eat it for breakfast and a quick snack for the week. I am hooked on carrot granola; I love the fact that it is not too crunchy and not too soft. It’s just right to eat and hope it doesn’t disappear by the end of the week.

I added the chocolate chips before it cooled and look what happens!

Carrot Granola:
Dry Ingredients:

2 cups rolled oats
¼ cup chocolate chips ( I use dairy free)
1tbsp. ground flax seeds
1 tbsp. sesame seeds
2 tsp. cinnamon
1 tbsp. raw brown sugar

Wet Ingredients:

1 cup shredded carrots
¼ cup honey
1 tbsp. olive oil
1 tsp. vanilla extract

Directions: Place shredded carrots into the food processor while the carrots are going add the honey, olive oil, and vanilla. Let the wet ingredients go for about three minutes in the food processor. While waiting mix all the dry ingredients in a big bowl, and make sure they are mixed very well. Once the wet ingredients are finished add them to the dry ingredients, and make sure they are mixed very well. Place a piece of parchment paper or silicone matt on a cookie sheet and add the carrot granola to the cookie sheet. Place cookie sheet in the oven at 350 degrees for 15- 20 minutes. Once the carrot granola is done stir it and let cool; add the chocolate chips and store an in air tight container.
